But at the touch of a button Rational’s powerful Finishing process, which is fitted as standard into its SelfCooking Center combi steamers, ensures that every dish is served perfectly, whether the event is catering for 30 or 3,000.
Finishing is an intelligent process that is designed to regen food perfectly, ensuring that the quality is as good as, if not better than, freshly cooked. It’s especially useful for preparing plated meals as it eliminates common issues such as drying out, over-cooking or condensation. The operator simply selects the ‘Finishing – plated banquet’ option on the control panel and the process does the rest, ensuring the food is brought up to temperature gently with no loss of taste or visual quality.
Because Rational’s Finishing is so efficient – a trolley rack of up to 120 plates can be prepared in just eight minutes – caterers no longer have to worry about unexpected delays. If there’s an over-long speech or a late guest, the staff simply wait, safe in the knowledge that they can ‘Finish’ the food quickly.
The complete Finishing system also comprises the plate reheating rack and a Thermocover. Once the food has been ‘Finished’, the rack is pulled out of the oven and the Thermocover can be put over it, storing the plated meals safely for up to 20 minutes before service. This means that several rack loads of meals can be prepared in a single SelfCooking Center.
